In my years as a Registered Dietitian, I have met many people who struggle with not having enough time to prepare healthy meals, and not having healthy, delicious recipes. To cope, people often turn to processed or fast foods, which contain a lot of sugar, salt and lack in nutrition.
People always ask me for a quick, easy and healthy recipes. This motivated me to design my own meals and create a cookbook. Not only to help my clients, but also be able to help people all over the world.
I decided to also embed nutrition tips and “myth busting” sections; between recipes from evidence-based research to help educate on healthy eating. My mission is to spread awareness, myth bust, and provide you with an easy and valuable resource. Healthy eating does not need to be difficult, complicated or tasteless; and this book is here to show you how!
There are 50 recipes in this cookbook, including breakfast, entrees, snacks, smoothies, salads, salad dressings, and desserts. All are diabetes-friendly, heart healthy and modifiable to be gluten-free and consider your caloric needs. I used the knowledge I have gained in my education and career to create delicious recipes. These recipes are not only healthy but have fabulous taste, and great texture, complete with nutritional information. In regards to this, I hope you enjoy this book as much as I have enjoyed creating it!
